While I'm working near Oxford Circus, I have been checking out the cafes and restaurants nearby, trying to find new and different places everyday for lunch.
One day I found Hummus Bros. And I've been going there quite a few times now. They are all about hummus!! How cool is that. They serve healthy, filling and really tasty food! And it's very affordable too. My favourite is the hummus bowl with tabouleh, falafels, and a warm pitta bread. Yum! Check'em out! They also have an app which you can use to look at their menu, and skip the queue. Today I tried making some sweet potato pancakes which was super easy and fun to make! I made a little salad to go with it (chickpeas, avocado, tomatoes and a walnut oil dressing). All you need to do is cook some sweet potatoes, mash them up, add some soy sauce, some sugar, some salt and some flour. Make a few little dough balls and then flatten them, ready to cook in a little oil in a frying pan! I made a sauce with creme fraîche (I didn't have any mayo or yogurt), lemon juice and some herbs. And tah daaah!

I changed a few things like peppers instead of chillies, and added some olives, and pasta. It's a super easy recipe, perfect for a lunchbox to bring to work or University. Simply add a lemon and olive oil dressing and there you go! |
